From the sparkling Mediterranean coast of Spain comes the distinctive Catalan cuisine. Forged from a variety of influences, including that of the Romans, Moors, French, and Italians, within one of the world's most diverse and multicultural societies, it has been justly called "Europe's last great undiscovered cuisine." Accessible, but at the same time exotic and mysterious, it's like a delicious secret in a language we almost understand --a secret begging to be told.

Catalonian cooking is based on such varied ingredients as onions, peppers, eggplant, tomatoes, garlic, olive oil, fried herbs, fresh fish and shellfish, rice, eggs, pasta, wild mushrooms, duck, goose, chicken, veal and pork, apples, pears, almonds, hazelnuts and pine nuts, chick peas, Fava beans, lentils, red and white beans and black-eyed peas, cinnamon, chocolate, bread, and wine.

What defines Catalan cuisine best is its remarkableness, doing unfamiliar things with familiar materials. In addition, Catalan West offers many of its own surprises, spicing up indigenous American ingredients such as Chesapeake blue crab and rockfish with traditional Catalonian touches, and infusing our Sunday brunch with a taste of the Mediterranean.
